About This Coffee
Capilla del Rosario spans 45 hectares between 1,650 and 2,000 meters in Rodeo Alto, Antioquia, looking over the Department's capital of Medellín. Led by fourth-generation grower Jose David Posada, the farm has moved well beyond traditional cultivation to become a recognized hub for processing innovation, education and coffee tourism. Jose brings together a background in business, culinary arts and education to drive both quality and sustainability forward, and his influence on Antioquia's coffee culture extends well beyond the farm gate.
Cultivation
The farm cultivates over 45 coffee varieties, including the Colombia and Castillo present in this lot, across terrain that ranges dramatically in altitude and microclimate. Capilla del Rosario produces over 50 metric tons of parchment coffee annually and operates a full suite of on-site infrastructure including a wet mill, dryers, fermentation tanks, shaded raised beds, a sensory lab and a sample roastery. The team runs educational sessions for visitors including farm visits, cupping classes and harvest experiments, grounded in a commitment to shade-grown cultivation and biodiversity preservation that shapes how the farm operates at every level.
Harvest & Post-Harvest
Cherry is selectively handpicked at peak ripeness and delivered directly to the mill. Coffee is pulped and washed before being submerged in fermentation tanks containing a liquid culture enriched with coconut extract and citric acid, alongside a starter culture of Lactobacillus spp. and mesophilic microorganisms cultivated over several years using coffee cherries. This symbiotic culture of bacteria and yeast ferments in direct contact with the parchment, driving flavor development without artificial flavorings or additives. After fermentation, the coffee is dried on shaded raised beds with controlled ventilation over several days, allowing slow and even drying that preserves the integrity of the profile.

Coffee in Colombia
Colombia has been producing and exporting coffee renowned for their full body, bright acidity and rich aftertaste, since the early 19th century.
Colombia boasts a wide range of climates and geographic conditions that produce their own unique flavors in coffee. This also means that harvest times can vary quite a bit. In fact, between all its different regions, Colombia produces fresh crop nearly all year round.
The increasing focus on the specialty industry is changing the way traders and farmers do business. It is becoming more common for farmers to isolate the highest quality beans in their lots to market separately. These higher-quality lots are often sold under specific brands or stories.
Besides its wide variety of cup profiles, Colombia has quickly expanded its certification options over the past 10 years. The most common certifications available are Fairtrade, Rainforest Alliance and Organic.
