Cultivation

The average farm size is 3.25 hectares. Farmers cultivate Bourbon variety trees on their lands. Their farms are located in the buffer zone of the Triunfo Biosphere Reserve.

The natural reserve has a protected ecosystem where endemic animals and plants can flourish. Farmers cultivate coffee in the biosphere’s buffer zone in an eco-friendly manner that protects the health of the soil and other plants and wildlife.

Harvest & Post-Harvest

Farmers selectively hand pick ripe cherry and process is on their farms. They pulp cherry and then ferment coffee in concrete tanks. Coffee ferments for 24 hours before being washed in clean water. Parchment is laid on patios to dry and raked frequently to ensure even drying. It takes about 8 to 10 days for parchment to dry.

Coffee in Mexico

Mexico is one of the largest exporters of certified Organic and Fairtrade coffees. Smallholders with less than 10 hectares compose a full 70% of Mexico’s coffee producers. Since the 1990s, producers have largely been successful at forming cooperatives that sell certified coffees and help them gain market access to garner higher prices.
