About This Coffee

FESICH (Federation of Indigenous and Ecological Cooperative Societies of Chiapas) is a cooperative founded on April 11, 2017, with 83 members cultivating coffee on 307.53 hectares within the buffer zone of the El Triunfo Biosphere Reserve.

45% of its members are women committed to organic coffee production, quality, and best practices. FESICH aims to empower its members by providing technical support and training in coffee plantation management, processing, storage, and transportation.

Cultivation

FESICH uses organic fertilizing methods, avoids pesticides and often practices agroforestry by integrating coffee plants with shade trees. This approach enhances biodiversity, improves soil quality, and provides habitats for various species.

Harvest & Post-Harvest

Only ripe cherries are selected for pulping. The coffee undergoes fermentation for 12-18 hours, followed by a fully washed process. Parchment is then sun-dried on concrete patios until it reaches a uniform moisture content of 12%.

Sustainable Harvest

Sustainable Harvest® is a specialty coffee trader focusing primarily on bringing coffees to market that are sourced from smallholder farmer cooperatives in the supply chain such as indigenous communities, women groups and the next generation of coffee farmers.

Their sourcing model is built on transparency, traceability and direct relationships between quality-minded coffee roasters and best-in-class coffee producers. Sustainable Harvest® has an on-site presence at origin with staff in Mexico, Colombia, Guatemala, Costa Rica and Peru. Each office coordinates their supply including quality management, supplier relationships, source development, logistics, training and capacity building.

Coffee in Mexico

Mexico is one of the largest exporters of certified Organic and Fairtrade coffees. Smallholders with less than 10 hectares compose a full 70% of Mexico’s coffee producers. Since the 1990s, producers have largely been successful at forming cooperatives that sell certified coffees and help them gain market access to garner higher prices.
