About This Coffee

Nelson, Ferney and their mother Alicia are a close-knit family who are passionate about both coffee and family. They own a coffee farm in El Pital, part of the Santa Rosa village, which spans 20 hectares and produces high-quality beans. In addition to working on the farm, Ferney is actively involved in the operations of his cooperative, COOCENTRAL, where he has been a member for almost two decades.

Coocentral operates under the motto “Una gran familia al servicio del caficultor, comprometida con el desarrollo de la región,"which translates to: "big family serving coffee producers and dedicated to the development of the region." It is indeed a big family, with the cooperative buying more than 10.2 million kilograms of parchment coffee from 3,483 members throughout the verdant Huila Department of south-central Colombia.

Cultivation

At the Macias Family farm, the art of coffee harvesting is meticulously carried out by hand, with a focus on selecting only the ripest cherries.

Harvest & Post-Harvest

After the selective hand-picking of only ripe cherries, they utilize the Ecomil system, a groundbreaking invention by Cenicafé that minimizes water consumption. This process involves dry pulping and fermentation, followed by a meticulous washing step to separate the mucilage from the parchment. The next stage involves solar drying, where the coffee beans are carefully spread out in canopies to be naturally dried by the sun's rays. To ensure consistency and quality, the dried beans are then stored in a mechanical silo. Finally, the coffee goes through meticulous milling, sorting, grading, and packaging at Coocentral's central processing facility, where the Macias Family's commitment to excellence shines through at every step.

Coffee in Colombia

Colombia has been producing and exporting coffee renowned for their full body, bright acidity and rich aftertaste, since the early 19th century.

Colombia boasts a wide range of climates and geographic conditions that produce their own unique flavors in coffee. This also means that harvest times can vary quite a bit. In fact, between all its different regions, Colombia produces fresh crop nearly all year round.

The increasing focus on the specialty industry is changing the way traders and farmers do business. It is becoming more common for farmers to isolate the highest quality beans in their lots to market separately. These higher-quality lots are often sold under specific brands or stories.

Besides its wide variety of cup profiles, Colombia has quickly expanded its certification options over the past 10 years. The most common certifications available are Fairtrade, Rainforest Alliance and Organic.
